Cottage cheese oat pancakes for breakfast: A simple, high protein way to start the day

March 14, 2024 by Susan 2 Comments

These cottage cheese oat pancakes feel too simple to taste as good as they do. They are quick to whip up in the blender, and are a good source of protein.

I was talking with a friend of mine recently about milk. Specifically, foods that kind of require an ice cold glass of milk alongside them. What would be on your list? Pancakes were at the top of ours.

I have a recipe for the perfect pancakes, and I stand by that. But sometimes you want the comfort of pancakes, but are trying to slip a little more protein into your day. This is the recipe for those days.

Oatmeal Bread: Two soft, easy to slice homemade loaves

October 11, 2021 by Susan 14 Comments

This simple homemade oatmeal sandwich bread smells amazing baking, is easy to slice, and soft and delicious to eat. You’ll be glad the recipe makes two loaves!

Sometimes you just want a good, sliceable, toastable, loaf of bread.

This is that loaf.

It’s perfect for slicing and serving fresh with just about any meal. We like it with butter, honey, or my dad’s homemade strawberry freezer jam. Mmmmmm…

It’s also totally delightful sliced and toasted with Nutella, or peanut butter, or lots of butter and cinnamon-sugar or more jam or honey.

I’m not particularly good at thinly slicing homemade loaves, but if you are…this would make fantastic saandwiches as well. Yum!

The Absolute Best Cinnamon Rolls

December 7, 2020 by Susan 11 Comments

This simple recipe can be made even by a complete beginner but is still my go-to recipe for the very best cinnamon rolls ever. Soft and gooey, with a sweet, maple-flavored frosting they are everyone’s favorite!

I’m about to tell you an embarrassing secret about myself: I kind of hate it when Christmas falls on a Sunday. Awful, right? I mean, it is Jesus’ birthday, after all. As a Christian I always feel like I’m supposed to say, “What better place to celebrate!” and ring a bell, or something.

But the reason is what’s so embarrassing: It’s brunch.

Christmas brunch is quite literally my favorite meal of the entire year. And we skip it when Christmas falls on Sundays (insert sad face)

Pancakes from scratch that’ll make you swoon a little.

September 24, 2018 by Susan 5 Comments

These simple pancakes, made from scratch, are the tastiest pancakes I’ve ever made. This is the last pancake recipe you’ll need.

I used to think of pancakes as just a vehicle for syrup.  Until I tried this recipe.  No kidding, every time I make them, my husband pauses while he’s eating and says, “These pancakes are really good.”

It makes me giggle now, because he says it every-single-time.

And they are!  Unlike a lot of pancake recipes I’ve made, these are actually tasty all on their own.  (Not that I skip the syrup, mind you.  I haven’t lost my mind.)

Sweet and Buttery Cherry Coffee Cake

May 21, 2018 by Susan 2 Comments

Buttery, sweet and tart cherry coffee cake. This easy coffee cake recipe is just as perfect for a special brunch as for a regular Tuesday morning.

Do you have a favorite meal of the year?  Maybe it’s Thanksgiving dinner with all the fixings?  A special New Years Day menu?  I’ve been saying for years that our Christmas brunch is my favorite meal of the year, but I realized recently that it may be tied with our Mother’s Day brunch.

Notice a theme?  This girl likes brunch.

This fast and easy Italian bread recipe is ready in less than an hour. It's not about perfection. Simple and rustic and made with only four ingredients!

Do you bake homemade bread?

I go through phases where I do more often, and then times when I just don’t.  I think I forget how quick it can be, because if I remembered, I think I’d make it a lot more often.

This fast bread recipe is just 4 ingredients and is ready to eat in under an hour…start to finish!
