Creamy Salsa Guacamole

This easy guacamole will be your new go-to for a quick snack, lunch, or side. Creamy salsa guacamole comes together with just a few ingredients.

A perfect avocado is a thing of beauty.  I get a little thrill every time I cut in and discover I’ve got one.  But I’ll be honest, avocados haven’t always been my favorite.

I really wanted to like them…I just didn’t.

They’ve grown on me in the past several years, though.  And now, you’ll find me dishing up spoonfuls of some simple avocado barely mashed with some lime and salt on fajitas, or even just with some tortilla chips.  Delish.

And this easy recipe is one of our favorite quick lunches.  (And by ‘our’, clearly I mean my husband and I… not my weirdly picky kids).

Easy Guacamole

If you’ve spent any time here at The Sparrow’s Home, you know that I like simple recipes.  Amazing taste doesn’t have to be difficult.  Impressive meals don’t have to take all day.

This recipe is perfect for a snack, appetizer, or served alongside any Mexican dish you’ve got.  But I’ve been making this a lot this summer for my husband and I for a quick lunch.  We eat it with chips and veggies (or just chips).

We love guacamole.  My husband makes a killer version with fresh chopped jalapeno, cilantro, and other goodies.  We had it made table-side at a restaurant in Texas the last time we were there and when we got home, he wanted to do his best to re-create it.

This is not that guacamole.

It’s way easier.  Aside from the avocado, there’s no chopping in this easy guacamole.  You see, all of the good stuff that you’d normally chop up is already in the salsa.

And the sour cream slides in there and brings some creamy to the party.

After you chop up your avocado, mash it just a little with a fork.  I like leaving some chunks, but if you prefer a totally smooth texture–go for it!


Next sprinkle on a little salt and squeeze on some fresh lime juice.  We think that 1/2 lime per avocado does the trick.

Mix it all together, then spoon on a dollop of sour cream and some of your favorite salsa.

My husband still makes his “real” guacamole, and it is a delight.  But for something fast and easy….this one wins for sure.  Seriously, 5 minutes and it is totally delish!

Creamy Salsa Guacamole

Ingredients

  • 1 avocado
  • 1/2 lime
  • salt to taste
  • 1-2 Tblsp sour cream
  • 1-2 Tblsp salsa

Instructions

  1. Chop avocado into small cubes and mash lightly with a fork, leaving some chunks for texture
  2. Sprinkle on a little salt and squeeze on the juice of 1/2 a lime
  3. Stir together to mix well
  4. Mix in sour cream and salsa to taste
  5. Serve with chips, veggies, or alongside any Mexican dish
