This honey bun cake is moist, sweet, and sticky… and incredibly simple. Prepare to be asked for the recipe every time you make it.

 

There are some recipes that every time you make it, someone asks you for the recipe and you think…why don’t I make this more often??

This is one of those recipes.

I found it a lot of years ago in a cookbook called The Cake Mix Doctor. (This recipe and one for a cream cheese pound cake were the real standouts in the book, most of the others I tried were kind of meh).

As you might guess from the title of the cookbook… this recipe uses a cake mix. If you’re a from scratch only kind of cook, feel free to pass on this recipe. If you, like me, are okay with the convenience of mixes now and then…keep reading.

Making this Easy Honey Bun Cake

Starting with a cake mix makes this super simple. Adding sour cream to the cake makes it super moist. Topping it with honey, brown sugar and cinnamon makes it sweet and sticky. And pouring on a sweet glaze takes it right up there to divine.

After you mix up the cake ingredients and pour every last bit into your pan, you’ll add the goodness on top. You don’t even need a bowl, just

drizzle on the honey…

sprinkle on the brown sugar…

and shake on some cinnamon.

After it bakes up and you take it out of the oven, start mixing up the powdered sugar glaze and drizzle it all over the hot cake.

Pro-tip for you: Don’t ignore the gooey goodness at the bottom of the pan. Remember that honey and brown sugar you lovingly covered the top of your cake with? Some of it seeps down through the cake and settles at the bottom. It’s kind of my favorite.  Heavenly…

Coffee Cake or Dessert

I first doubled this cake when I made it for the staff at the charter school where my daughter-in-law works. It fits perfectly in a large, rectangular foil pan. (Just bakes a bit longer…watch it, closely).

I also doubled it when making it for that same daughter-in-law’s Winnie-the-Pooh themed baby shower recently. (Watch for a post all about that coming up!)

It baked a little long that time (which is why the advice to watch it closely is fresh in my mind) …still tasted delish, though.

Make this cake for a snack with a cup of coffee, or as a quick dessert. It’s perfect for taking to potlucks or bringing to a neighbor or a new mom. And while I can’t make any promises, I can tell you that you’ll probably get asked for the recipe.

Ingredients

  • 1 box yellow cake mix
  • 1 cup sour cream
  • 3/4 cup vegetable oil
  • 1 tsp vanilla
  • 4 eggs
  • Topping:
  • 1/3 cup honey
  • 1/3 cup brown sugar (heaping)
  • 1 Tbsp cinnamon (approx)
  • Glaze:
  • 2 cups powdered sugar
  • 1/3 cup milk
  • 1 tsp vanilla

Instructions

  1. Mix cake mix, sour cream, oil, eggs and vanilla on low until combined.
  2. Scrape down sides and mix on medium speed for about 2 minutes.
  3. Pour cake batter into 9x13 pan sprayed with cooking spray.
  4. Drizzle honey over top of cake.
  5. Sprinkle with brown sugar.
  6. Shake cinnamon on top.
  7. Bake in pre-heated 350 oven for 38-42 minutes (do not overbake, test doneness with toothpick)
  8. When cake is about done, mix up glaze, whisking to remove lumps of powdered sugar.
  9. Drizzle glaze all over hot cake.
  10. Let cool completely before covering.
