Jump to recipeAn easy and delicious chocolate bundt cake that is perfect to bring to a potluck, make for a coffee date, after school snack, or just because.
No story about how moist and delicious this simple cake is. Sorry. No long intro about how leftovers are the best with a cup of coffee or an afternoon snack. Nope. Not even an anecdote about how it’s the perfect easy recipe to make for potlucks.
I will tell you a few things, though.
Simple Chocolate Bundt Cake
I’ll tell you that this rich cake is made with mixes (plural). If you’re a solely from scratch baker, it’s ok if you pass on this recipe. (Or, you could give it a try and it might change your mind) 🙂 I prefer to bake from scratch, but I also don’t dismiss the convenience of utilizing mixes to make delicious things.
And besides that…I can’t be the only one who finds myself in this situation: Your mother’s love language is food and every year in the fall when baking items go on sale she stocks up and the result is that you have a pantry full of cake and brownie mixes along with all the flour and sugar and chocolate chips?
Just me?
The original recipe for this cake has a chocolate drizzle over the top. Yummy for sure. But I found it easier to dump the chips right in the cake batter and sprinkle with a little powdered sugar. (If you want to make a ganache instead, it’s simple: 1 cup of cream and a bag of chocolate chips).
You could also make a cream cheese icing and turn this into your version of a Nothing Bundt Cake. (Do you have those near you? Divine.)
And if you’re looking to use up some eggs, this is a great recipe for that as well. It uses four!
My kids told me that this cake tastes like the huge chocolate muffins at Costco, so I tried baking the batter in my giant muffin tins. They were totally right…except these were richer! I still usually prefer to bake it in my bundt cake pan, because it looks so pretty!

What is the measurement for the chocolate chips as I sometimes have extra large bags of them?
It’s 2 cups. I updated the recipe to show it, I’m glad you asked!
Can’t wait to try this. Is the package of chocolate chips the 12 oz. size?
Yes, it’d be about 2 cups of chips. Hope you like it!!
Looks yummy. Would you know what sizes the boxes of choco cake and brownie mixes are? It’s been a while since I’ve used them and can’t remember if our store had them in different sizes?
I think cake mixes just come in one size, brownie mix may come in two. I believe it’s the 13×9 pan size that I’ve gotten. Honestly, I almost never buy these because my mom buys me a bunch of cake and brownie mixes when they go on sale in the fall, and I use them so rarely I seem to always have some in my pantry! 🙂
You had me at “Triple Chocolate”! Thanks for sharing this on the Wonderful Wednesday Blog Hop 🙂 I made my first bundt cake not too long ago and it was also a triple chocolate beauty (https://www.bakesandblunders.com/chocolate-mayonnaise-bundt-cake/), but it used mayo. Say what?! I love that your recipe uses a box of brownie mix. That’s got to add so much amazing flavor! I’m going to pin this recipe and try it out sometime.
I’ve heard of using mayo in cakes to add moistness, but I’ve never tried. Yogurt, sour cream, but never mayo. I’ll have to give it a go!
Oh, my! This looks amazing! I am a fan of bundt cake. Will have to try this one!
I hope you love it! It’s so easy!
Chocolate mayonnaise cake…a favorite of our family for many years! This bundt cake looks delicious. I will try for my brother’s birthday who doesn’t like a lot of frosting.
I have heard the mayo makes them moist, but haven’t tried them. Hope you enjoy!
The cake looks so good. I was looking for a cake without frosting. I like this one.
Do you use regular size chocolate chips or miniatures. I’ve used the large size before in banana bread and they always sink to the bottom. So I’ve used the miniatures and it works out better.
I have used both kinds of chips and gotten good results!
This recipe looks delicious! I look forward to trying! I’m thinking about trying the batter in muffin sizes-how long should I bake for?? Thank you!
I would guess maybe 20 minutes? That’s when I’d start checking, it may be more like 25 or so. Enjoy!
