I love when recipes remind me of someone, don’t you? In an instant you’re transported to a memory that you hadn’t thought of in forever, yet suddenly it’s like you’re there again. So today, I spent the afternoon back in high school, in my friend Jess’ kitchen with her mom. Shirley was the kind of mom everyone wanted; and I have a feeling that she influenced the future momming of a lot of young ladies.
I have to think that she influenced the Christmas cookie line-up of a lot of people as well with these winners. They’re so simple, and use just a few ingredients, but somehow are more than the sum of their parts.
Over the years I’ve seen a similar Christmas cookie that involves spreading peanut butter on full size Ritz crackers, sandwiching them together, then dipping. No judgement if that’s your jam (well, a little judgement) but I have to tell you that these pop-in-your-mouth variety are a million times better…and easier, I have to think.
Just a few ingredients
It’s a ratio game more than a recipe. Two bags of chocolate chips to one bag of butterscotch chips and 2-3 boxes of Ritz Bits Peanut Butter filled.



Melt. Dip. Decorate. Chill. Indulge.



Living in Minnesota, my garage makes for a perfect chilling location. It’s also where I like to store the treats after they’re packaged up.
I usually buy 3 boxes of the Ritz Bits and just keep the extras for snacking. But today, I got the last 2 boxes of these at Target and so ended up with extra chocolate/butterscotch. Instead of letting it go to waste, I decided to make a little sweet and salty bark situation. The broken bits of cracker and peanut butter got mixed in, along with a few handfuls of pretzels and some Golden Grahams I had in the cupboard. Pretty yummy.

We haven’t had ours in a few years, but taking the time to spend a day mixing, dipping, and baking treats with people you love is a valuable investment at the start of a time of year that can get kind of crazy.
Speaking of this time of year.. mess is okay, you know. You might be getting the message that you’re supposed to be filled with perpetual peace and joy yet find yourself in the middle of some messy life stuff. Take a breath. Focus on the moments of peace and joy you can find in the middle of the mess.

Ingredients
- 2 bags chocolate chips
- 1 bag butterscotch chips
- 3 boxes Ritz Bits Peanut Butter Filled
Instructions
- Melt the chips together (either in the microwave or double boiler)
- Toss several Ritz Bits into the melted chocolate and lift out with a fork, tapping to remove excess chocolate
- Using second fork to slide off, place onto wax paper lined pan or tray
- Decorate with sprinkles if desired
- Chill to set and store in cool location






Personally, I don’t do chocolate. But my husband was the recipient of some of these little bites and really enjoyed them. I appreciated the message of gratitude and hope and messiness!
