Who isn’t looking for easy weeknight dinners?  This is a recipe I grew up on, and it’s always been one of my favorites.  I recently shared my mom’s recipe for wild rice soup.  While she made that only once or twice a year, this hamburger stroganoff graced our table frequently.

It’s a simple, skillet dinner that comes together quickly and is especially wonderful on a chilly night.

This is kind of the definition of hearty.

Simple Homemade Granola

This is a basic, simple granola recipe that you can customize however you like. Add your favorite combination of nuts or dried fruit. It’s easy & delicious!

Simple Homemade Granola

I have been making this granola for over 15 years.  I found the recipe from a magazine or book that was on the coffee table in a friend’s home.  I copied it onto a scrap of paper, and the rest is history.

I like to give this granola as gifts at Christmas time, packaged up in cellophane bags or Mason jars.

Recipes that lend themselves to customization are my favorite.  With one basic recipe, you can make loads of different variations.  This granola is definitely one of those recipes.  Here are some of my favorite additions:

Winter is soup weather.  If you’re a soup fan, you’re going to want to check this one out.  It is unique to every other wild rice soup I’ve ever had.  Most wild rice soups are thick and hearty.  I love ’em.  My creamy chicken and rice soup is thick like this.  Yum!  But this soup is not like that.

For some reason, decades ago, when my mom got the recipe for this wild rice soup, she didn’t thicken it as much as called for.  What that leaves you with is a silky, creamy broth.  It’s totally unique.  And wonderful!

Crock Pot Lasagna Soup

This lasagna soup for the crock pot is hearty and satisfying!

Every year I host a Christmas cookie baking day for a group of ladies.  We spend all day baking, dipping, and decorating.  By lunchtime, we are ready for a hearty, satisfying lunch.  And because my kitchen is full of baking sheets, sprinkles, and cookies in various stages of preparedness… I need something easy!

My standby is a crock pot full of soup.  Maybe cheesy potato, maybe creamy chicken and rice.  I like to serve something that I can prepare in advance.  Then at lunchtime, all I have to do is heat up some rolls or breadsticks and we’re all set!

This year I made lasagna soup.  And there was not a drop left.  None.  That’s a good sign, right?!

Are you a dipper or a non-dipper?

Biscotti was made for dipping.  It’s name actually means twice baked.  And that’s done so it gets good and dry and crispy so it has maximum absorption.  I’m particular to dipping in a hot cup of coffee, but hot cocoa is yummy too!

These cookies have a reserved spot in my gift giving lineup.  They’re fun to wrap up with some hot cocoa mix and chocolate dipped spoons.
