These fudgy brownies are the perfect blank canvas for add ins and customization. Nuts, chips, candies, frosting..the list is endless. And they're SO easy!

I’ve made a million different kinds of brownies over the years.  OK, not really a million…but at least 15.  And I can honestly say that I don’t recall a brownie I didn’t like.  I mean…chocolate.

For the last few years, though, this brownie recipe has been my one and only.  It’s kind of a conglomeration of a few recipes I’ve made.  It’s quick and easy, chewy and fudgy.  All things I look for in a brownie.

And it is the perfect blank canvas.

Love is Caramel

August 24, 2016 by Susan 8 Comments

This easy caramel sauce is perfect to whip up for a spontaneous ice cream sundae or dipping slices of apples. No candy thermometer needed.

Easy Caramel Sauce

I think love is caramel. Sweet and fragrant; always welcome. It is the gentle golden colour of a setting harvest sun; the warmth of a squeezed embrace; the easy melting of two souls into one and a taste that lingers even when everything else has melted away. Once tasted it is never forgotten.     – Author Jenny Colgan

I have made ‘real’ caramel before.  You start with white sugar and burn it just enough to get caramel-y but not enough to scorch.  Delicious indeed, but time consuming.  And frankly, stress that I don’t need in my life.

If you, like me, occasionally need to whip up a quick caramel sauce…this is for you!

This easy hot fudge sauce comes together in just a couple of minutes.

So I didn’t actually time it, but can’t take more than 2 minutes to make this Hot Fudge Sauce.  Maybe 3.

I wrote yesterday about the ice cream floats we made for our Titanic Girls Movie Night.  Since I had gotten the ice cream at Costco, we had leftovers, of course.  So I did what any nicest-mom-in-the-world would do…I made sundae toppings!

We’ll just go ahead and make this whole week’s posts about ice cream.  What do you think of that?  Tomorrow I’ll tell you how to make the world’s easiest caramel sauce.

Monday was our first day back to school, so let’s end summer with a bang.  (And by bang I mean ice cream).

Ooey Gooey Triple Chip Skillet Cookie

August 10, 2016 by Susan 8 Comments

An ooey, gooey dessert that you mix in the same skillet you bake it in! I make mine with semisweet, white, and milk chocolate chips.

An ooey, gooey dessert that you mix in the same skillet you bake it in!

Just last night my husband sidled up to me after dinner and sweetly asked, “Any chance you’ve got plans to bake something sweet tonight?”

“Well,” I said, “I could make a skillet cookie.  But we don’t have any ice cream, and you kind of need ice cream with—.”

Before I could finish the reply came from the other room.  Our 16 year old son said, “I’ll go get ice cream.”  Oh the joys of having a kid who drives!

This dessert may give my dulce de leche bars a run for their money in the melty, ooey, gooey yumminess department.  But the best thing about this is how easy it is.  You make it all in the skillet!

Chewy Almond Bars

July 20, 2016 by Susan 17 Comments

These chewy almond bars are made with ingredients you have on hand, are so easy to make in a pinch, are deceptively delicious and look pretty on a cookie tray!

Do you have that recipe that you fall back on when you’re in a pinch?  That recipe that you turn to when your husband reminds you on Saturday night that you’re scheduled to bring treats to church in the morning?  The one that you pull out when you’ve forgotten that the bake sale is tomorrow?

Yeah.  This is that recipe for me.

These almond bars are so easy.  And so very very delicious.

Healthy Chocolate Mousse

July 5, 2016 by Susan 16 Comments

Easy, healthy chocolate mousse recipe that starts with a can of coconut cream. Fluffy, creamy and decadent. A dollop of cream tops it perfectly!

Easy, healthy chocolate mousse recipe that starts with a can of coconut cream.

Would you like to hear a funny story about chocolate mousse?

One Christmas I decided to get fancy with dessert.  Not only did I want to wow everyone with a decadent chocolate mousse, but I had visions of piping it into dishes like a pastry chef.

I made the mousse the day before Christmas, and I must say…it was outstanding.  Just as rich and decadent, light and fluffy as you might imagine.  Because I wanted to pipe it out, I decided to store the mousse directly in the Ziploc bags I’d be using instead of piping bags, which I did not have.

Fast forward to dessert time.  Taking my bags out of the fridge, I thought they felt a bit heavy.  All of the air that I had painstakingly incorporated into this fluffy dessert was gone and I was left with bags of a dense, fudge-like substance.  Not to be deterred, I set about my piping.
