I didn’t cook bacon for years.  Isn’t that sad?

It was the splatter factor.  I couldn’t get past it.  Do you struggle with that too?  The splatter was messy, for one thing.  But it was the pain that I just couldn’t deal with.

And then I discovered this easy method for making bacon in the oven and it changed everything!

Sweet, Succulent Ham

I like ham fine.  I wouldn’t say it’s my favorite meat.  But this ham…it’s ham like I didn’t know ham could be.  I think the word “succulent” might have been invented for this ham.

It’s a bit more labor intensive than other recipes.  Not hard, just several steps.  But it’s all done earlier in the day, so at dinner time, there’s nothing to do but take out the magic meat and dig in.

I combined two recipes to make this, and it all comes together in a perfect, lip-smacking way.  I always make biscuits with this because the sweet, juicy shreds of meat are perfect with a bit of tender biscuit.  And leftovers make the best little sandwiches the next day!

Easy BBQ Pulled Pork

An easy to put together, slow cooked, tender pulled pork. It's a great freezer meal to pull out on busy nights.

Who doesn’t love The Pioneer Woman?  There was a period in which I could expect the question, “Is this a Pioneer Woman recipe?” whenever a new menu item appeared that my husband loved.  We are taken with her Braised Beef Brisket (minus the liquid smoke and less soy than called for), and Steak Bites (which, with a little Worcestershire added, are something even my not-overly-excited-about-meat son gets excited about).

The third member of this meat trifecta of love is Pulled Pork.

The original recipe is called Spicy Shredded Pork, and as written is to be served in tortillas … Tex Mex style.  I changed up the seasoning a bit and serve it with BBQ.

Easy Gyro Recipe

This Gyro recipe is easy to make with many different kinds of meat. Delicious and frugal because you can use what's on sale or in your freezer!

One of the tips for saving money at the grocery store that I hear most often (because it’s a great tip) is to buy what is on sale.

Most of the time, that means buying what’s advertised on the front and back of the weekly sales flier.  Sometimes, though, you come across an unexpected markdown.  I once found Beef Roasts that had been mis-marked at $.06 per pound, and the store honored the price.  I bought 8.  (I wanted to buy them all, but didn’t want to look greedy).

This recipe for Gyros is easy to customize with whatever kind of meat you have in your freezer or find on sale.  I’ve made them with both chicken breasts and pork chops and they have turned out equally delicious.  I’ll bet they would be yummy with beef, too.

It makes for a great make ahead, also.  Just mix up the marinade ingredients and pour over your meat of choice in a Ziploc bag and freeze.  I love having things in the freezer ready to go, don’t you?  (Check out my freezer recipe for Texas Toast, it’s buttery and delicious).  A stash in the freezer can make dinner prep so quick on those busy nights!
