This easy guacamole will be your new go-to for a quick snack, lunch, or side. Creamy salsa guacamole comes together with just a few ingredients.

A perfect avocado is a thing of beauty.  I get a little thrill every time I cut in and discover I’ve got one.  But I’ll be honest, avocados haven’t always been my favorite.

I really wanted to like them…I just didn’t.

They’ve grown on me in the past several years, though.  And now, you’ll find me dishing up spoonfuls of some simple avocado barely mashed with some lime and salt on fajitas, or even just with some tortilla chips.  Delish.

And this easy recipe is one of our favorite quick lunches.  (And by ‘our’, clearly I mean my husband and I… not my weirdly picky kids).

Cheesy Potato Soup…Yes Please

Making a big pot of this warm and comforting cheesy potato soup is easier than you might think.

Fast and simple cheesy potato soup. This is the perfect comfort food!

 

I have been making this soup since 1991.  (Not this exact pot of soup, that would be weird….and gross).  When I moved to Atlanta to go to college, my mom send me with a stack of recipes.  This creamy, cheesy, potato soup soon made its way to the top of the stack.  And once I made it, it became a regular.

It’s so simple, and can be easily doubled for a crowd.

I made a big pot this week to take for lunch with some dear friends, and of course had to leave a bowl for Greg.  It is rich and filling, but still made better with a dip of some fresh baked bread, if you ask me.

Wild Rice & Cornbread Stuffing

This wild rice & cornbread stuffing recipe is the perfect new addition to your meal!

This wild rice and cornbread stuffing is easy to make and is a delicious twist on a classic.

 

Does it matter to you if I call this stuffing or dressing?  I think that technically anything not baked in the bird is called dressing.  However, I associate the word dressing with the gloppy wet side dish my grandma made that I refused to eat.  It didn’t look tasty.

So this may technically be dressing, but I call it stuffing.  Either way, major yum!

I am a real fan of traditional stuffing.  But I’m an even bigger fan of this unique and amazingly delicious wild rice and cornbread stuffing.  The slightly nutty wild rice and slightly sweet cornbread make the perfect combination.

These simple roasted vegetables are an easy and impressive side dish. You can use any veggies you’ve got on hand. And leftovers heat up fantastically!

Coming up with side dishes can be the worst.  You want something new and different, but not difficult.  Whenever I serve roasted vegetables there are ooos and ahhs.  Like I took out the good china, or something.  Is it because of the impressive presentation…huge baking sheets filled with colorful veggies?

They are pretty.  The fact that it’s so special tells me that I need to do it more often.  After all… it’s so easy!

Seriously, I made trays of roasted vegetables last night and my husband had some leftovers for lunch today.  He just walked in and said, “Those were so good…like some of the best food you make.  Ever.  You can make those whenever you want.”  He said that about vegetables.  Vegetables!  (This is from the guy who told me that my vegetable lasagna tasted “too vegetable-y”).

Vegetable Lasagna: Summer on a Plate

A vegetable lasagna packed with loads of fresh veggies, creamy ricotta, tender pasta and gooey cheese. Customize with whatever vegetables you have on hand.

This fresh, vegetable lasagna is like summer on a plate. Yum!

 

The snow is melting, the temperature is rising.  Spring is most definitely right around the corner.  I can almost remember that summer once existed.  It was nice, if I’m remembering correctly.

And then, while tidying up my computer’s desktop, I came across some pictures of this bursting-with-freshness summer vegetable lasagna.  Suddenly, summer felt real to me.  I could remember not feeling cold, the smell of grilling meats, and bright green grass.
