Caramel Cake (Or Brown Sugar Cake, if You Think You Don’t Like Caramel)

The frosting is what makes this caramel cake divine. It is an easy, cooked icing that cools to a hard shell and melts in your mouth.

This easy caramel cake melts in your mouth! It will be an instant favorite!

Caramel cake.  Every year for his birthday.  Caramel cake.  Then one year my eldest determined he “didn’t like caramel”.  So we had “brown sugar cake” for his birthday that year.  Same recipe I’d used every other year.

Have I told you my kids are picky?

Sometimes I sneak things in. Like in my super healthy rich and delicious chocolate pancakes, and this chocolate mousse.  Other times, I just call something by another name.  For a time:

  • Tomato soup was “SpaghettiOs with no noodles”
  • Nutella was “chocolate spread”
  • And anything with bread or a crust was “(fill in the blank) pizza”

I even had a jar of pureed dates in the fridge that my kids ate for an entire summer because I called it “caramel.” Ahh the power of suggestion.

We’re back to calling caramel cake “caramel cake” again, and it’s still my son’s pick for his birthday cake every year.  (He turns 18 this year!  Yikes!)  Sadly, my husband and I will be out of town at a conference on his birthday, so we’re celebrating early this year.

Grace…Then What?

After we've been shown grace, then what? We light the path for those behind us.

 

Do you watch the Amazing Race?  My husband loves that show, and has recently been catching up on years of missed episodes.  I don’t love it and here’s why:  the bickering.  If I want to hear people arguing, I’m perfectly capable of picking a fight myself (quite skilled, in fact. 😉 )

But watching other people argue? It stresses me out.

In one recent episode he was watching, I noticed that when groups found a clue, they would try to stealthily read and record information without other groups knowing.  And that’s good strategy when you’re competing.  

If they were all on one team, when they found the clue they’d call out, “Found it!” so everyone could run over and see the information.

And that’s exactly what I’ve been noticing that both King David, and the Apostle Paul did in Scripture…and what we, as believers, are supposed to be doing.

Are you a Lord of the Rings fan?  I’ll admit, I haven’t read the books.  But I love the movie trilogy.  They are so rich and full of wisdom and heart.  I know, I know, I need to read the books.  Right now I’m working my way through the Harry Potter series, and not very quickly, at that.

We love a party with a theme around here, so when my niece finished the book series, we had to get one on the calendar.  What better way to spend a Saturday, than going on an epic adventure with tasty treats to fill your belly!

Chicken Parmesan Bites

Chicken Parmesan Bites. Crispy, tasty, and easy! This recipe is much less fuss than a traditional chicken parmesan, perfect for a weeknight meal.

There is a time for lengthy, involved recipes.  They often yield some of the most tasty creations, that make the time invested totally worth it.  And then there’s a time for brevity.  And oh the joy when an easy recipe yields an amazing result!  Angels sing!

My mom gave me a chicken parmesan recipe when I moved out that I made lots of times to rave reviews.  It involved the traditional steps of dipping chicken breasts in an egg mixture and breadcrumbs, browning in oil, then baking with cheese and marinara. Delish!

These chicken parmesan bites, however, are much more likely to make it to the dinner table.  They’re a snap to make and are so flavorful!
