Easy Bacon in the Oven

Bacon in the oven is the easiest way to make bacon with much less mess! No splattering, no tending and clean-up is a breeze.

I didn’t cook bacon for years.  Isn’t that sad?

It was the splatter factor.  I couldn’t get past it.  Do you struggle with that too?  The splatter was messy, for one thing.  But it was the pain that I just couldn’t deal with.

And then I discovered this easy method for making bacon in the oven and it changed everything!

How do you celebrate Mother’s Day?  We used to go out to a brunch buffet after church.  But as our families grew, it started getting pretty expensive.  We also realized that we didn’t spend much time enjoying each other’s company in the busy restaurant.  So several years ago we began having brunch back at our home.  (My sisters and I decided that my parent’s house wasn’t an option, as my mom would stress about things getting done).

The Best Banana Bread Recipe

 Hands down the best banana bread I’ve ever made. Moist and tasty, and so easy to mix up!

This is the best banana bread recipe I've found!

Everybody thinks their banana bread recipe is the best.  I’m not here to start any fights, but…

Let me give you my testimony.  I’d been making banana bread since I was in elementary school.  It was good, don’t get me wrong.  (Mom, grandma’s recipe is fine…please don’t disown me).  I’ve even made variations over the years and tried other recipes just to see, but always went back to my old standard.  Until, that is, I tried this one several years ago.

On the Road Again: Pigeon Forge, TN

A trip to lovely Pigeon Forge, TN for a Christian conference.

“You just take your time, sweetie, and your room will be here waiting for y’all when you get here.”  I hung up the phone and said, “I love the South!”  Just calling to confirm our reservation reminded me.

We spent last week in Pigeon Forge, Tennessee.  My husband and I were both invited to teach at a conference.  We could not have asked for a lovelier environment.

The last time I was in Tennessee, it was an impromptu trip with a youth mission team.  This time, we’ve been planning for months.  Greg taught a workshop on Creation vs. Naturalism and I led one for homeschoolers.  I also got to host a discussion for families considering homeschooling, and was invited to speak during one of the evening services.
