I found this recipe when looking for recipes to make for a girls movie night a couple of years ago.  We were watching Evita, and I was searching for recipes from Argentina.  These little gems appeared, and I was smitten.

Wild Rice & Cornbread Stuffing

This wild rice & cornbread stuffing recipe is the perfect new addition to your meal!

This wild rice and cornbread stuffing is easy to make and is a delicious twist on a classic.

 

Does it matter to you if I call this stuffing or dressing?  I think that technically anything not baked in the bird is called dressing.  However, I associate the word dressing with the gloppy wet side dish my grandma made that I refused to eat.  It didn’t look tasty.

So this may technically be dressing, but I call it stuffing.  Either way, major yum!

I am a real fan of traditional stuffing.  But I’m an even bigger fan of this unique and amazingly delicious wild rice and cornbread stuffing.  The slightly nutty wild rice and slightly sweet cornbread make the perfect combination.

Isn’t it terrible when you like something, but no one else in your family does?  Frequently, when we got to potlucks, or other events, I’ll make one of these recipes.

Coconut is one of those things around my house.

I looooovve coconut, but my family won’t eat it.  Weirdos.

So can you guess what I made for our church’s annual Harvest Supper dessert on Saturday?  Coconut cream pies of course.

The Only Pecan Pie That Matters

This is the perfect recipe for pecan pie. I found this recipe in a cookbook from Betty’s Pies near Duluth, MN. Haven’t made a different recipe since.

Has someone ever gotten you a gift that was more for them than it was for you?

Years ago, my husband and I spent a romantic weekend just north of Duluth, MN.  We rode bikes along Lake Superior, walked in the woods, and ate at Betty’s Pies. That year, for our anniversary, my husband got me a copy of Betty’s Pies Favorite Recipes cookbook.

Yeah, I thought the same thing.

Don’t get me wrong…I love to bake, and I love the cookbook.  But I had a sneaking suspicion that this gift was as much for him as for me!

I’ve tried a number of Betty’s recipes, but it’s her pecan pie that grabbed a hold and won’t let go.  I haven’t made a different recipe since.

Stock the Freezer

Stock the freezer for quick meal prep

I am zero looking forward to my boys moving out one day.  Not in the least.  Nope.  Uh-uh.  I’m actually kind of in denial that it will ever happen.

Having said that, if I had to pick one thing that I’m kind of, a tiny little bit, looking forward to it would be cooking a wider variety of meals for Greg and I.  And especially trying some of the awesome-looking freezer meals I see on Pinterest.

My kids are weird picky, and I don’t get how because from the time they were little, we had a variety of foods.  They both ate everything until around 3 to 4 and then the picky moved in.  We tried everything…ignoring it, forcing it, begging, pleading, bribing, punishing.  Lately we’re in the mocking territory.  (As in, I’ll serve lasagna and say, “The plain noodles and plain meat are over there,…the adult food is over here.”)

So when I see these crockpot freezer meals that look so yummy, but are (God-forbid) all mixed together…I pin them for later.  Much later.  Like years down the road. (I told you…denial)  Although every once in awhile, when the boys are out, I’ll try something for just Greg and I.  A casserole here.  A crockpot meal there.

In the meantime, I do like to keep my freezer stocked with some ingredients that make meal prep quicker.  And I’ve been on a bit of a freezer-stocking binge lately.
