Do you eat seasonally?  Whether you really try to or not, you probably do more than you even know.  We are naturally drawn to warm, hearty meals in the colder months.  I know I pretty much never make things like stroganoff or stew or hot, gooey apple desserts until there’s a chill in the air.

This is an easy kids recipe. Older kids could make this on their own, and it's simple enough for little to help with too!

When I got word that my Chick-fil-A Mom Panel was being tasked with creating recipes for kids I knew just the little sweetie I wanted to help me make mine.  After all, my kids are teenagers, and one is officially an adult (yikes!) so they don’t really qualify to help me out with ‘kids’ recipes.  If you have littles, like my friend Scarlett here, you’ll want to work with them on this recipe.  But if your kids are a bit older, this is totally something they could do on their own.

Do you remember where you’ve gotten most of your recipes?  I remember a lot of them.  Isn’t it fun, when you’re making something, to think back to where you got the recipe, or who you got it from?

I got this recipe for herb and garlic skillet chicken decades ago.  Back when Barnes & Noble  still had lots of big, comfy chairs in them, my husband and I used to go there for cheap, newlywed dates.  I’d get a cup of coffee, and we’d sit for hours.  Reading, talking about what we were reading.  And since it was back before Pinterest, I would copy recipes from the magazines and books I’d read onto scraps of paper in my purse.

So I’m sorry to whoever created this recipe, but I didn’t record my sources….and, it’s been over 20 years.

There is a time for lengthy, involved recipes.  They often yield some of the most tasty creations, that make the time invested totally worth it.  And then there’s a time for brevity.  And oh the joy when an easy recipe yields an amazing result!  Angels sing!

My mom gave me a chicken parmesan recipe when I moved out that I made lots of times to rave reviews.  It involved the traditional steps of dipping chicken breasts in an egg mixture and breadcrumbs, browning in oil, then baking with cheese and marinara. Delish!

These chicken parmesan bites, however, are much more likely to make it to the dinner table.  They’re a snap to make and are so flavorful!

This quick chicken teriyaki and sesame noodles come together in a snap. It's an easy weeknight meal that tastes like you ordered out!

Have you ever really wanted to like something, but you just didn’t?  Part of dating is finding out what someone’s ‘quirks’ are and deciding if you’re good with that particular kind of crazy.  Things like weird fears, how they handle illness, or listening to parade music for fun.

When we were dating, Greg confessed that he hated Chinese food.  (Gasp!)  What he actually said was “I really want to like it…everyone always looks like they’re having so much fun when they eat it.”  When I was pregnant, he was kind and went with me to Chinese restaurants.  Being a lover of rice dishes like jambalaya, the fried rice began to grow on him.  Then a young man from Cambodia that he worked with brought homemade egg rolls to share and my picky eating husband surprisingly tried them…and loved them.

Since then, he’s found a few dishes that he enjoys (beef and broccoli, for example) at restaurants.  But he much prefers when I make Asian-inspired recipes at home, like this chicken teriyaki and sesame noodles.

These chipotle seasoned chicken fajitas are one of the quickest meals to put together on a weeknight. It's so easy, it's a stretch to even call it a recipe.

 

I always have onions and butter.  Always.  So when 4:30 came around and and I went to the kitchen to start making the jambalaya I had planned, I was kind of put out to find neither.

Please tell me I’m not the only one who’s found myself in this situation.

These chicken fajitas are one of the quickest recipes I keep in my ‘back-pocket’ to pull out on nights like this one.
