Oatmeal creme pie sandwich cookies: Tastes like sweet, gooey, nostalgia

April 3, 2023 by Susan Leave a Comment

These oatmeal creme pie sandwich cookies are a special treat that are filled with sweet gooey nostalgia. Brown sugar oatmeal cookies with a marshmallow-ey filling. They’re easy to make, too!

Sometimes you’re looking for a quick cookie recipe to knock out a sweet treat. Other times, you want to take the time to make something a little more involved. These special goodies are for those days. Not that they’re difficult. They’re cookies. But sandwich cookies simply have a few more steps…steps that are worth it.

I made this recipe a long long time ago, and then it drifted to the back of my recipe box. (Anyone else have a recipe box, or are you pretty much all digital now?) Somehow I didn’t make them again until last week.

My sweet daughter-in-law and perfect grandbaby spent the day with me recently. We made a couple of changes from the original that, I think, take them through the roof…and I think I’ll be making them more frequently now.

Date Paste: The natural caramelly sweetener that’s full of nutrients

May 20, 2019 by Susan 7 Comments

Dates are a super nutritious natural sweetener full of caramelly good flavor.  Pureeing them into this delicious date paste makes them easy to use in lots of ways.

Date Paste: The natural caramelly sweetener that's full of nutrients

Dates used to scare me.  I hate to say it, but I always thought they looked like cockroaches.  Ick- not interested.

But then I read how many nutrients there are in dates.  Interested.

Then I heard that when pureed, dates become a caramel-like elixir.  Very interested.

So of course I had to give them a try.  I was sold immediately.  And although I still think they look like cockroaches (they do!) I’m a big fan and frequently have a jar of date paste in my fridge.

Let me tell you how I make it and how I use it.  I know you’re gonna want to try it too.

Triple Chocolate Bundt Cake

February 18, 2019 by Susan 16 Comments

An easy and delicious chocolate bundt cake that is perfect to bring to a potluck, make for a coffee date, after school snack, or just because.

Triple Chocolate Bundt Cake

No story about how moist and delicious this simple cake is.  Sorry.  No long intro about how leftovers are the best with a cup of coffee or an afternoon snack.  Nope.  Not even an anecdote about how it’s the perfect easy recipe to make for potlucks.

I will tell you a few things, though.

Meet cheesecake cups–fresh, fast, and sorta fancy

July 30, 2018 by Susan 3 Comments

No-bake, crustless cheesecake cups are an incredibly easy way to serve up an impressive dessert that everyone will rave about.

This  dessert just kind of screams fresh.  It’s the perfect sweet treat for spring or summer.  Everybody loves it, and everyone can make it their own.  I’ve made it for Easter dinner for several years now.

Big hit.

It’s also a winner when you’ve got folks who don’t eat chocolate (I know…weird, right?!)  And my picky kids even love this.

Like I said, big hit.

And it’s so stinkin’ easy to make, it’s kind of embarrassing.

S’mores Snack Mix: 3 Ingredients Mix and Go

June 4, 2018 by Susan 2 Comments

This super simple s’mores snack mix is made with just 3 ingredients. Mix it up and it’s ready to serve. No baking, no melting…seriously, just mix and serve. It’s the perfect, fun, sweet treat!

Sometimes, I am not my mother’s daughter.  I run late..a lot.  And I forget things.  Lots of things.  Things like when I’m in charge of bringing snacks for after church.

I’ll admit it’s gotten better since I’ve been paired with my niece.  She is much more like my mom.  Organized.  Totally on top of things.  She typically texts me during the week to ask what I’m bringing, which is usually my reminder that I’m on treat duty that Sunday. (Thanks, Steph!)

Individual Cakes in Jars

March 26, 2018 by Susan 4 Comments

These adorable individual cakes in jars are the perfect dessert because they are quick to mix up and bake while you eat. Top with a rich, chocolate ganache and your family will swoon.

Do you usually make dessert for dinner?  Unless we have guests, I don’t.  But every once in a while it’s nice to surprise my guys with a sweet treat, and these cuties are one of my favorites.

Each person getting their own little cake in a jar…adorable!  The cuteness is lost on the boys, but being the only girl in the house, I am used to that.

They love them because they’re totally delish.
