Yucky Delicious Pizza Intestines

October 26, 2016 by Susan 4 Comments

Pizza intestines are a yucky but delicious way to gross out a crowd. Whether you have zombies on TV, are studying the human body, or just want a spooky snack.

Pizza intestines are a yucky but delicious way to gross out a crowd.

I know I told you this recipe was coming yesterday…so sorry!  Let me tell you, I’m exhausted!  My eldest has been making some changes to his plans for next year (he graduates this spring), so I’ve been in full time academic advisor/homeschool mom mode.  We’ve also been making some college visits, and doing loads of research to get to a decision.  None yet!

So with no further ado…I give you…pizza intestines!

This is so icky.  And so easy.  And tasty, too!

Whether you’ve got zombies on the TV, are studying the human body, or just want an ooky snack (if you’ve got boys, you get this possibility) – intestines pizza may be for you!

I made this as an appetizer, but it could be a main dish or a side just as easily.

Sweet, Succulent Ham

October 18, 2016 by Susan 16 Comments

You’ve never had ham like this. This unique method produces a sweet and flavorful ham that will really amaze you. Promise.

This unique method produces a sweet and flavorful ham that will really amaze you. Promise.

I like ham fine.  I wouldn’t say it’s my favorite meat.  But this ham…it’s ham like I didn’t know ham could be.  I think the word “succulent” might have been invented for this ham.

It’s a bit more labor intensive than other recipes.  Not hard, just several steps.  But it’s all done earlier in the day, so at dinner time, there’s nothing to do but take out the magic meat and dig in.

I combined two recipes to make this, and it all comes together in a perfect, lip-smacking way.  I always make biscuits with this because the sweet, juicy shreds of meat are perfect with a bit of tender biscuit.  And leftovers make the best little sandwiches the next day!

Alice’s Tomato Pie

September 20, 2016 by Susan Leave a Comment

Cheesy, fresh tomato pie is a treat you’ll want to make again and again! It’s an easy and frugal recipe that is so much more than the sum of its parts.

Cheesy, fresh tomato pie is a treat you'll want to make again and again!

I know that we’re well into “Pumpkin Spice” season…but I’m still picking fresh tomatoes.  Are you?  I’m not hating on pumpkin spice, here.  Autumn is a lovely season that I plan to enjoy to its fullest.  But this feels eerily like “Back to School” sales beginning in July or Christmas decorations in stores in … well, I was going to say October, but we saw some last night!

So when my friend, Alice, shared her recipe for tomato pie with me a couple of weeks ago, I knew I had to pass it along to you.  Even though it’s pumpkin spice season.

Maybe I’m feeling kind of rebellious because Red Dawn is on TV.  Whatever the case… here’s to tomato pie and bucking the system.  Wolverines!

Lasagna Bolognese with Bechamel

June 7, 2016 by Susan 3 Comments

This lasagna has cheese oozing between layers of meaty, saucy goodness and tender pasta. If you’re looking for a twist on a classic, try this!

If you’re looking for a new twist on a classic, give this a try. Unless you don’t like cheese oozing between layers of meaty, saucy goodness and tender pasta. In that case, definitely do not make this lasagna.

Lasagna is one of those things that has about as many variations as the vast number of cooks that make it.  A quick search brings up a list including Chicken Alfredo Lasagna, Spinach Lasagna, Vegetarian Lasagna, Mexican Lasagna, Cajun Lasagna and even a number of dessert versions.  I’m pretty sure I’d enjoy just about all of them, too.

When it comes to what people consider “traditional” lasagna, although not as many, there are certainly a number of varieties.

Most lasagna I’ve had, and made, has layers of pasta, meat, sauce, cheese and fluffy ricotta cheese (usually mixed with an egg to help bind it).  I make a lasagna like this in one of two ways.  Either with meat or with lots of veggies (this usually shows up in the middle of summer with goodies from our CSA).

But I also have a slightly different style that I find myself making most often.  It doesn’t use the ricotta.  Instead, you make a creamy white sauce (a béchamel) that makes it the ooiest, gooiest yum fest you can imagine.

And that’s my purely scientific observation.

Since it’s not a variety that most people have tried, I thought I’d share the recipe with you today.

Easy BBQ Pulled Pork

May 2, 2016 by Susan 2 Comments

An easy to put together, slow cooked, tender pulled pork. It's a great freezer meal to pull out on busy nights.

Who doesn’t love The Pioneer Woman?  There was a period in which I could expect the question, “Is this a Pioneer Woman recipe?” whenever a new menu item appeared that my husband loved.  We are taken with her Braised Beef Brisket (minus the liquid smoke and less soy than called for), and Steak Bites (which, with a little Worcestershire added, are something even my not-overly-excited-about-meat son gets excited about).

The third member of this meat trifecta of love is Pulled Pork.

The original recipe is called Spicy Shredded Pork, and as written is to be served in tortillas … Tex Mex style.  I changed up the seasoning a bit and serve it with BBQ.

Easy Gyro Recipe

April 22, 2016 by Susan Leave a Comment

This Gyro recipe is easy to make with many different kinds of meat. Delicious and frugal because you can use what's on sale or in your freezer!

One of the tips for saving money at the grocery store that I hear most often (because it’s a great tip) is to buy what is on sale.

Most of the time, that means buying what’s advertised on the front and back of the weekly sales flier.  Sometimes, though, you come across an unexpected markdown.  I once found Beef Roasts that had been mis-marked at $.06 per pound, and the store honored the price.  I bought 8.  (I wanted to buy them all, but didn’t want to look greedy).

This recipe for Gyros is easy to customize with whatever kind of meat you have in your freezer or find on sale.  I’ve made them with both chicken breasts and pork chops and they have turned out equally delicious.  I’ll bet they would be yummy with beef, too.

It makes for a great make ahead, also.  Just mix up the marinade ingredients and pour over your meat of choice in a Ziploc bag and freeze.  I love having things in the freezer ready to go, don’t you?  (Check out my freezer recipe for Texas Toast, it’s buttery and delicious).  A stash in the freezer can make dinner prep so quick on those busy nights!
