It wouldn’t be Christmas around my house without these fudgy, mint brownies. They’re a rich treat that is perfect for special occasions.

Triple layer mint brownies. Cool. Fudgy. Decadent.

My kids have not known a Christmas without these brownies.  And I’ve never made them!

I’m fortunate to have a group of ladies that I get together with every year to bake, dip, and decorate our way to a tasty Christmas season.  We call it “Cookie Baking Day” and my family is happy to do whatever is required to accommodate it.

My sister, Amy, makes these mint brownies every year, and it just wouldn’t be Christmas without them.

Before you even read the recipe, let me tell you:  this is a once a year treat.  Why do I say that?  Oh, maybe the fact that each of the three layers includes an entire stick of butter.  Granted, they’re made in a large pan…that’s still a lot of butter!

The bottom is a moist brownie, then there’s a layer of creamy minty goodness, and all of that it topped with rich, chocolate icing.

This might sound weird, but I like mine chilled.  That’s probably because we keep our containers of Christmas cookies in the garage on a shelf.  Give it a try…see which way you like them best!

Oh my goodness. It was hard enough trying not to put on extra pounds during the holidays. This one is definitely a keeper.

One of the reasons we keep all of our Christmas cookies out in the garage is the “out of sight out of mind” philosophy. Not totally effective, but it does make things last at least a little longer, and reduces the cookie binges. 🙂

You must have known that chocolate and mint are my all-time favorite combo! Oh, WOW, they look amazing – it’s good you don’t live next door, because I would have to break into your garage for brownies! (And, you know I’m kidding, right?! LOL) Seriously. Yum. Thanks for the recipe! (I may have to experiment to make it sugar free – or less sugar… But keep the butter! Of course!)

Haha! We got locked out of our house last spring and had to break in the garage…I can tell you it’s not easy! 🙂 If you do come up with a less sugar option, I’d love to hear how it turns out!

    Oh my oh my!
The first picture drew me in like a moth to a flame, and then the pictures just got better and better!

What a lovely tradition, what a lovely treat, although I suspect I’d be struggling with your once a year rule 😉
    Enjoy!
