My kids have not known a Christmas without these brownies. And I’ve never made them!
I’m fortunate to have a group of ladies that I get together with every year to bake, dip, and decorate our way to a tasty Christmas season. We call it “Cookie Baking Day” and my family is happy to do whatever is required to accommodate it.
My sister, Amy, makes these mint brownies every year, and it just wouldn’t be Christmas without them.
Before you even read the recipe, let me tell you: this is a once a year treat. Why do I say that? Oh, maybe the fact that each of the three layers includes an entire stick of butter. Granted, they’re made in a large pan…that’s still a lot of butter!
The bottom is a moist brownie, then there’s a layer of creamy minty goodness, and all of that it topped with rich, chocolate icing.
This might sound weird, but I like mine chilled. That’s probably because we keep our containers of Christmas cookies in the garage on a shelf. Give it a try…see which way you like them best!

Here’s the recipe:
Ingredients
- For brownie layer:
- 1 16 oz. can Hershey's syrup
- 1 stick butter
- 1 cup sugar
- 4 eggs
- 1 cup flour
- For Mint layer:
- 1 stick butter
- 4 cups powdered sugar
- 4 Tbsp. milk
- 1 teaspoon peppermint extract OR 3 drops peppermint essential oil
- Green food coloring
- For Frosting:
- 1 12 oz. bag chocolate chips
- 1 stick butter
Instructions
- Line a cookie sheet/jellyroll pan (15 x 10 x 1) with foil and spray foil with cooking spray. (Or grease and flour pan)
- Make brownies:
- Cream butter and sugar
- Add eggs, one at a time
- Add Hershey's syrup
- Mix in flour
- Pour into prepared pan and bake at 350 for 25 minutes:
- Remove and let cool completely
- Make mint layer:
- Cream butter
- Gradually add powdered sugar
- Add milk a tablespoon at a time until you reach a spreadable consistency
- Add extract (or essential oil) and food coloring
- Spread on cooled brownies
- Make Frosting:
- In a medium saucepan (or microwave) melt chocolate chips with butter
- Stir until smooth
- Spread on top of mint layer
- Let cool until set
Oh my goodness. It was hard enough trying not to put on extra pounds during the holidays. This one is definitely a keeper.
One of the reasons we keep all of our Christmas cookies out in the garage is the “out of sight out of mind” philosophy. Not totally effective, but it does make things last at least a little longer, and reduces the cookie binges. 🙂
You must have known that chocolate and mint are my all-time favorite combo! Oh, WOW, they look amazing – it’s good you don’t live next door, because I would have to break into your garage for brownies! (And, you know I’m kidding, right?! LOL) Seriously. Yum.
