Summer Recipes Worth Waiting All Year For

July 25, 2017 by Susan Leave a Comment

A collection of favorite summer recipes. Words like fresh, grilled, cheesy, smoky, crisp, fruity, & cool come to mind. Find something new to try this summer

Do you eat seasonally?  Whether you really try to or not, you probably do more than you even know.  We are naturally drawn to warm, hearty meals in the colder months.  I know I pretty much never make things like stroganoff or stew or hot, gooey apple desserts until there’s a chill in the air.

But summer….

Summer recipes are for veggies and grilling.  Think… fresh.

Berry Crumble (or Cobbler or Crisp)

July 12, 2017 by Susan 4 Comments

Not quite a crisp. Not quite a cobbler. I’m calling it a berry crumble. It’s Delish! So easy because it can be made with frozen berries.

Not quite a crisp. Not quite a cobbler. I'm calling it a berry crumble. Delish!

It’s been causing me some stress to decide whether to call this recipe a cobbler or a crisp.  I’m no food historian, and I don’t happen to be up on my precise cobbler vs. crisp definitions.  Cobblers have always seemed more ‘cakey’ to me and crisps are more…well, crisp.

That’s where my problem comes in here.  The delicious topping for this dessert starts out much like a traditional crisp recipe, but there’s one main difference that makes it almost like a cookie topping.

It’s really delicious.  It is crisp.  But it’s also kind of chewy.  I really love it.

And with that eloquent description, let me tell you how to make it!

Cheesy Chicken Roll Ups: A Kids Recipe Made By One of the Cutest [Video]

June 28, 2017 by Susan Leave a Comment

This is an easy kids recipe. Older kids could make this on their own, and it's simple enough for little to help with too!

When I got word that my Chick-fil-A Mom Panel was being tasked with creating recipes for kids I knew just the little sweetie I wanted to help me make mine.  After all, my kids are teenagers, and one is officially an adult (yikes!) so they don’t really qualify to help me out with ‘kids’ recipes.  If you have littles, like my friend Scarlett here, you’ll want to work with them on this recipe.  But if your kids are a bit older, this is totally something they could do on their own.

The Tastiest Homemade Popcorn

June 20, 2017 by Susan 10 Comments

There’s nothing like a big pot of homemade popcorn. See what special ingredient makes this popcorn the most flavorful, tastiest you’ve ever made!

This is the only way I make my homemade popcorn...so flavorful and tasty!

A good, big, pot of old-fashioned stovetop homemade popcorn is one of the most wonderful things, don’t you think?

I have fond memories of my dad making popcorn this way when I was young.  As I grew older (think: college years) microwave popcorn was so much easier, so the old ways took a backseat.  Well, they eventually took back over the driver’s seat and now it’s all I make.  Oh, I’ll occasionally pick up the microwave stuff for my kids.  But truly, almost never.

Why?  Because the homemade version is SO much better and SO stinkin’ easy!

Homemade Ice Cream Anyone Can Make (Because You Don’t Need Any Special Equipment!)

June 14, 2017 by Susan 4 Comments

You don’t need special equipment to make homemade ice cream. This easy recipe can be customized to make your favorite flavor. It’s the perfect summer treat!

Easy Homemade Ice Cream. Would you make ice cream more often if you didn't need any special equipment?

What are the lengths to which you will go to enjoy your favorite ice cream?  My husband, being from the south, is a big (BIG) Blue Bell Ice Cream fan.  We don’t have Blue Bell here in Minnesota.  (Boo, Minnesota!)  When we visited my mother-in-law in Texas, we toured the Blue Bell factory.  And can I say, touring an ice cream factory is a great way to spend a day.

Visiting Tennessee in April allowed us to indulge all week long.  (And we did!  At one point our freezer had 5 containers.)  We even packed a cooler full of ice and Blue Bell to bring home…no kidding.  In case you’re wondering, Pecan Praline is our favorite, and the kids would probably say Birthday Cake.

And while it’s no Blue Bell, I’m here to tell you today how you can make homemade ice cream in minutes.  Minutes!  Well, minutes is all the time it takes to mix it up…of course there are a few hours of freezing time.

Baked Rice: The Easy, No-Mess Way to Cook Rice

May 31, 2017 by Susan 14 Comments

Cooking rice is messy! This easy, no mess, baked rice will completely change dinnertime for you. No sputtering. No babysitting. Just fluffy, perfect rice.

This baked rice is an easy, no mess way to cook rice.

Cooking rice is messy.  No matter how large of a pot I use, it boils over and leaves a starchy, sticky mess on my stovetop.  I even tried a rice cooker.  It sputtered the same sticky splatters and had parts that got coated in the muck that I had to wash each time.  Gah!

Then I started reading about baked rice.  Baking rice in the oven eliminates all the mess.  It sounds too good to be true, I know.

But it’s not!
