Chocolate cake with chocolate frosting. Pretty much every birthday until I discovered German Chocolate frosting and switched things up on occasion.
And this was the recipe my mom made. When I was old enough to read and saw that the recipe was called ‘Magic Fudge Cake’ I asked her why. “Because it doesn’t use any eggs,” was the answer.
Unimpressed, I wondered why that mattered. Big deal, who doesn’t have eggs.
Fast forward to 2023, and here I am regretting not having chickens anymore. Yikes, right?!
So…with the price of eggs at a premium, perhaps you’ll enjoy having this little baby in your back pocket.
No Egg Magic Chocolate Cake
The cake recipe is super simple. Just mix up the dry ingredients: Flour, sugar, cocoa, baking soda and salt. Then mix in the ‘magic’.
The recipe calls for making three holes in the dry ingredients to add the vanilla, oil, and vinegar (plain ol’ white vinegar). I’m not sure making the holes really matters, but can I tell you…it’s kind of fun. It’s been awhile since I’ve played in a sandbox.
Then you dump a couple of cups of water (plain ol’ tap water) over the top and mix it all up.
Easy peasy
You can bake this in round layers for a pretty birthday cake, but a 9×13 pan is the simplest.

Fudge Icing
The fudge icing is a boiled frosting made with chocolate chips, butter, sugar, milk and a bit of vanilla and the tiniest pinch of salt.
I’m not gonna lie, I could eat this with a spoon…or dive in head first. Anyone else go all Augustus Gloop-y when faced with warm melty chocolate? Just me?
I hadn’t made this cake in awhile, and discovered something … you need to let the icing cool a bit to thicken up so it’s spreadable OR… you can pour it over the top so it can soak in a bit. You’ll end up with more of a glaze. But it is shiny and smooth and moist.
If you want a more spreadable icing, let it cool for about 10 minutes, then stir with a whisk or wooden spoon until it’s the consistency you’d like. Then spread over your cake.
Chocolate Cake Time
This cake is amazing with some vanilla ice cream. It’s also pretty delish with a cup of coffee or tea. It’s not a fancy cake, but it sure is simple to mix up.
Whether you go with the thinner glaze, or the spreadable icing…you will be glad you made this old fashioned cake. And…you might be able to put your kid through college with the money you’ll save on eggs.
Magic Chocolate Fudge Cake (No Eggs!)
Ingredients
- cake:
- 3 cups flour
- 2 cups sugar
- 1/3 cup cocoa
- 2 tsp. baking soda
- 1 tsp. salt
- 1 tsp. vanilla
- 2 Tbsp. white vinegar
- 3/4 cup vegetable oil
- 2 cups water
- icing:
- 1 cup sugar
- 5 Tbsp. butter
- 1/3 cup milk
- 3/4-1 cup chocolate chips
- 1 tsp. vanilla
- tiny pinch of salt
Instructions
- Mix flour, sugar, cocoa, baking soda, and salt in a mixing bowl. Use the back of a spoon to make three holes in the mixture. Into one hole, add the vanilla; into the next, add the vinegar; and to the third, the oil. Pour 2 cups of water over the top and mix everything well.
- Pour into greased 9x13 pan and bake in oven pre-heated to 350 for 35-40 minutes.
- (Can also bake in 2 round cake pans for 30 minutes)
- When cake comes out, set on rack to cool and begin making the frosting.
- In a small saucepan, combine sugar, butter, milk and chocolate chips. Stir and heat over medium heat. Bring to boil. Boil and stir one minute. Remove from heat and stir in vanilla and salt.
- If looking for a glaze, stir for a couple of minutes until shiny, then pour over cake.
- For spreadable icing, let cool for about 10 minutes, then stir until a spreadable consistency is reached. Spread over cake.
