Everybody thinks their banana bread recipe is the best. I’m not here to start any fights, but…
Let me give you my testimony. I’d been making banana bread since I was in elementary school. It was good, don’t get me wrong. (Mom, grandma’s recipe is fine…please don’t disown me). I’ve even made variations over the years and tried other recipes just to see, but always went back to my old standard. Until, that is, I tried this one several years ago.

Best Banana Bread
I found the original recipe on a site I just love: Simply Recipes. Check it out–good stuff there!
You can make it with two or three bananas, whatever you’ve got on hand. I usually use three. I don’t know what it is (the melted butter, maybe?) but this is the only recipe I use now. And it’s so stinkin’ easy! You can make it all in one bowl, with no mixer. I like to whiz up my liquid ingredients in the blender (for some reason, chunks of mushy, cooked bananas are not appealing to me, I like it smooth).


I made this recently for our Lord of the Rings movie marathon, and it was a big hit. It’s perfect for breakfast (or second breakfast), brunch, or an afternoon snack.
You can customize it by adding in chocolate chips, blueberries, or nuts. My favorite, however, is this plain, simple loaf. I like to cut a thick slice and spread it with soft butter for breakfast, cutting my slice into sticks. Mmmm…

Ingredients
- 2 or 3 ripe bananas
- 1/3 cup butter, melted
- 1 egg
- 1 teaspoon vanilla
- 1 1/2 cups flour
- 1 cup sugar (3/4 cup if you don't like it as sweet)
- 1 teaspoon baking soda
- pinch of salt
Instructions
- Put bananas, egg, melted butte and vanilla into blender.
- Blend until smooth. (Or mash banana by hand and mix in other wet ingredients)
- In bowl, mix flour, sugar, baking soda and salt.
- Add liquid ingredients.
- Mix just until combined.
- Pour into greased loaf pan.
- Bake at 350 for 50 minutes to 1 hour, or until toothpick comes out clean.
