Meet cheesecake cups–fresh, fast, and sorta fancy

July 30, 2018 by Susan 3 Comments

No-bake, crustless cheesecake cups are an incredibly easy way to serve up an impressive dessert that everyone will rave about.

This  dessert just kind of screams fresh.  It’s the perfect sweet treat for spring or summer.  Everybody loves it, and everyone can make it their own.  I’ve made it for Easter dinner for several years now.

Big hit.

It’s also a winner when you’ve got folks who don’t eat chocolate (I know…weird, right?!)  And my picky kids even love this.

Like I said, big hit.

And it’s so stinkin’ easy to make, it’s kind of embarrassing.

S’mores Snack Mix: 3 Ingredients Mix and Go

June 4, 2018 by Susan 2 Comments

This super simple s’mores snack mix is made with just 3 ingredients. Mix it up and it’s ready to serve. No baking, no melting…seriously, just mix and serve. It’s the perfect, fun, sweet treat!

Sometimes, I am not my mother’s daughter.  I run late..a lot.  And I forget things.  Lots of things.  Things like when I’m in charge of bringing snacks for after church.

I’ll admit it’s gotten better since I’ve been paired with my niece.  She is much more like my mom.  Organized.  Totally on top of things.  She typically texts me during the week to ask what I’m bringing, which is usually my reminder that I’m on treat duty that Sunday. (Thanks, Steph!)

Sweet and Buttery Cherry Coffee Cake

May 21, 2018 by Susan 2 Comments

Buttery, sweet and tart cherry coffee cake. This easy coffee cake recipe is just as perfect for a special brunch as for a regular Tuesday morning.

Do you have a favorite meal of the year?  Maybe it’s Thanksgiving dinner with all the fixings?  A special New Years Day menu?  I’ve been saying for years that our Christmas brunch is my favorite meal of the year, but I realized recently that it may be tied with our Mother’s Day brunch.

Notice a theme?  This girl likes brunch.

Adding the words “kid friendly” to your kale chips recipe isn’t fooling anyone

May 7, 2018 by Susan 11 Comments

There’s no one definition of a picky eater, but I think we can safely agree that plain wins the day.  These simple recipes tend to go over well and can be customized.

Do you have picky eaters?

If so then you, like me, are skeptical of lists that claim to be “kid friendly”.  It’s especially offensive to click a link promising “10 recipes your picky eaters will devour” only to find it full of recipes with ingredients many adults I know wouldn’t even eat.

Chickpeas, really?

Chicken Pot Pie 2 Ways

April 23, 2018 by Susan 5 Comments

Chicken Pot Pie with one crust or two crusts, baked in an iron skillet or in a pie plate. Same easy recipe, same homey comfort food.

Chicken Pot Pie with one crust or two crusts, baked in an iron skillet or in a pie plate. Same easy recipe, same homey comfort food.

Did you grow up on those little, frozen, pucks of pot pie like I did?  In college they were a staple, and when Greg and I first got married, they made quick weekend lunches.

Then I learned how to make it myself, and I haven’t bought one since.

Not only is this probably my favorite use of Thanksgiving leftovers (beside sandwiches…there’s just something special about a post-Thanksgiving turkey sandwich, isn’t there?) but one of my top comfort foods in general.  It’s on my list of meals to take to friends in need, too.

Individual Cakes in Jars

March 26, 2018 by Susan 4 Comments

These adorable individual cakes in jars are the perfect dessert because they are quick to mix up and bake while you eat. Top with a rich, chocolate ganache and your family will swoon.

Do you usually make dessert for dinner?  Unless we have guests, I don’t.  But every once in a while it’s nice to surprise my guys with a sweet treat, and these cuties are one of my favorites.

Each person getting their own little cake in a jar…adorable!  The cuteness is lost on the boys, but being the only girl in the house, I am used to that.

They love them because they’re totally delish.
