I’m so old I remember when pumpkin was something you carved, not something you put in your coffee. I do like a pumpkin spice latte, though, so there will be no complaining from me! I wanted to put together a collection of pumpkin recipes for you to try this fall…er, should I say, pumpkin spice season.
I looked for recipes that I plan to try, or have already made. I’ll be sure to let you know which ones I’ve already road tested for you.
And in case you have picky eaters like I do, I’ll give you a tip. Years ago, when my boys adamantly refused to eat anything with the word ‘pumpkin’ in it, I began adding a dash of molasses and calling it ‘gingerbread’. Sometimes I wouldn’t even add the molasses. It’s a similar spice combination. Hey, we do what works, right? (I also called tomato soup “Spaghetti-O soup with no noodles”, and still hide vegetables in chocolate pancakes, so…)
But we were talking about pumpkin recipes. So let’s get to it.

I’ve made this twice. It’s so open to customizing, which is right up my alley! I like mine with a handful of walnuts added. The only tip I’d offer is to be sure to bake it long enough. The second time I made it I didn’t, and ended up putting it back in to soften up the pumpkin flesh a little more. It’s a side dish. It’s dessert. It’s breakfast. It’s seriously delicious.

All the pumpkin recipes look great but I would try the cobbler first. 9:30 at night is not a good time for me to be looking at deserts.
